Crockpot Pulled Pork and Sundays

I love Sundays for a lot of reasons, but I especially love having the time to cook something yummy.  Guitar Dude usually has band practice on Sunday, so I like to have the house smelling good when he walks back through the door.  I also like whatever I make to have a lot of leftovers so we have them for lunch the following week if I can manage it.  A friend of mine made pulled pork last week, and hearing about it made my mouth water so I decided to do some up, too.  Let me tell y’all, it was hard to smell this all day long without being able to eat it.  That’s the only downfall to the crockpot.  It’s like a little self-contained tease sitting there all day long taunting you… “Smell it?  Mmm… don’t you want to eat it?  Ohhhh, you can’t.  It won’t be done for another 6 hours.”  Dangit.

Pulled Pork

I think I need a bigger crockpot.

A lot of people put a lot of fancy stuff and not-so-fancy stuff in their pulled pork, but I keep mine pretty simple.  I just throw a boston butt into the crockpot with a half a cup of water, two large sweet onions (quartered and separated), a bunch of minced garlic, salt, pepper and smoked paprika.  I put it on high for an hour or two and then turn it to low for at least 6 hours so I have a total cook time of at least 8 hours.  You can’t rush perfection.  You can tell it’s finished when it practically falls apart just by looking at it.

Pulled Pork Sandwich

When he got home, Guitar Dude whipped up some home fries and we made a Coca Cola barbecue sauce to top the pulled pork sandwiches.  It was so good that when I got out a sandwich of it this morning to take this picture, I seriously contemplated having it for breakfast.  I may be able to hold out for lunch.

Not only is this delicious, but it’s also economical, too.  We have a large bowl of it in the fridge that we’ll be able to eat off of for at least 3 – 4 days, plus I put away two containers in the freezer – one for more barbecue some day and one for some bean soup which will also end up lasting us forever.

This is definitely among my favorite Sunday suppers ever.  It was so tender and juicy, and that Coke barbecue sauce is the bee’s knees.  Don’t get me wrong, I love some Carolina-style sauce, too, but the Coke stuff is good.  It’s a nice combination of sweet and savory, and the consistency is just right.  What kind of barbecue sauce do you like?

    You have the easiest pulled pork recipe for the crockpot. I like all the onion and garlic.
    Uncle John and I love this savory meat and we both love the vinegary sauces. There is a fella in Galax who opened up a restaurant and he cooks his at his home all night and then he sells it for take home by the pound. It’s excellent. When I’m lazy or get an urge to eat some right away, we can always run down and buy a pound. A bit harder to find in Anna Maria area but we have found some.

    I’m glad my craving turned into a weeks worth (and then some) of dinners for you. And I’ll have you know that I thought of you on Friday night when we got to Alabama and Alana had a boston butt cooking up in the crock pot. It was DELICIOUS.
