Fat Free Blueberry Muffins

I’ve been working on a blueberry muffin recipe ever since I started eating healthy.  Every time I make them, I reduce the fat just a little bit more.  This time, I made them totally fat free expecting cardboard to come out of the oven, but instead I was very pleasantly surprised!  I figured since I finally nailed the recipe for fat free blueberry muffins, I’d share it with y’all.

The funny thing about posting two baked goods recipes this week is that I don’t really bake!  On top of that, I’m not normally much of a sweets person.  However, I’ve found that in eating healthy, I like my treats to also be somewhat healthy.  I used to be a salty snacker, but I had to put those days behind me for the most part.  Putting fruit in my snacks makes me feel better.  I mean, a serving of fruit is a serving a fruit whether it’s plain or in a pie, right?  Sounds logical to me.

Fat Free Blueberry Muffins

Fat Free Blueberry Muffins

1 1/2 cups whole wheat flour
1/2 cup Stevia in the Raw
1/4 cup regular sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup applesauce + 1/2 cup applesauce
1/4 cup Egg Beaters (egg substitute)
1/3 cup fat-free, lactose-free milk
1/4 tsp vanilla butternut extract (can use vanilla instead)
1 pint blueberries, washed and sorted

Instructions

Preheat oven to 400 degrees.  Spray the muffin cups of a 12-muffin pan with non-stick cooking spray.  Whisk together in a bowl the flour, sugar, Stevia, salt and baking powder.  In another bowl, stir together the applesauce, egg substitute, milk and vanilla butternut extract until smooth.  

Pour liquid into flour mixture and stir until well moistened.  Gently stir in the blueberries.  Spoon the batter into the muffin cups until 2/3 of the way full.  

Bake in oven until the tops of the muffins are lightly browned, approximately 15 – 20 minutes.  Do the whole toothpick thing to make sure they’re done.  

Enjoy while warm!

I really think the whole reason these do not seem dry even with all the fat removed is because of the number of blueberries in them.  You get blueberry in every single bite, and it is deeeeeeeeeeeeee-licious.  If you give these fat free blueberry muffins a try, come back and tell me what you think!
